Green Chile Pork Carnitas

This is the simplest green chile pork carnitas recipe ever.  You can make dutch oven carnitas with green chile sauce and green chile.   Then serve these green chile carnitas in a tortilla topped with cheese with avocado.

So today I am craving these green chile pork carnitas wrapped in a warm tortilla.  Here  I go again cooking with Hatch green chiles .  I am not sure why I have been in such a Mexican food kick here lately.  Maybe cause my sweet hubby’s favorite food group is Mexican food.   And its my second favorite food group.   Maybe I have always cooked more Mexican food than anything else. And especial with Hatch green chile. 

 

Carnitas are seasoned bite sized pieces of pork cooked in a green chile sauce until tender.  Serve in a corn tortilla or wrapped in a flour tortilla with toppings of cheese, avocado and jalapeño.

What are green chile carnitas made from: 

 
 
 
Carnitas are made from a pork roast that you can chop into 1 inch bite size pieces.   And then they are seasoned with salt and pepper prior to cooking.  
 
 

How to make Dutch Oven Carnitas:

You can make these green chile carnitas by cooking them in a dutch oven.  The advantages to a dutch oven is the heavy bottom creating even heating.  It is perfect for searing meat at high temps plus maintaining low heat for a long time.  So it’s perfect for these since we will be searing them and then turning down the temp and cooking for a long time. 

 

Green Chile Pork Carnitas Recipe

Ingredients:
  • 2 pound pork roast
  • onion, roughly chopped
  • 2 cloves of garlic, minced
  • 28 can green chile sauce
  • chicken broth, optional
  • 12 roasted green chiles, roughly chopped  (fresh or canned)
  • salt
  • black pepper

Serving Suggestions:

  • corn or flour tortillas
  • Monterey Jack Cheese
  • Flour Tortillas, could use corn tortillas if you prefer
  • Jalapeños 
  • Fresh Cilantro
  • Avocado
 
Equipment Needed:
  • Sharp Knife
  • Dutch Oven
  • Garlic Peeler
  • Garlic Chopper

Instructions:

  • Use a sharp knife and cut the pork roast into 1 inch cubes.  Sprinkle  salt and black pepper
  • Add the pork cubes into a large dutch oven over medium high heat and cook until brown meat creating a sear on the outside. 
  • Add the chopped onion and cook until translucent, add minced garlic and stir to combine, cooking for 1 minute.
  • Pour in the green chile sauce and bring to a boil.  Reduce heat to simmer and cover.
  • Cook for about 2 hours until the carnitas are fork tender checking often.  If more liquid is needed, add a little chicken broth. 
  • After carnitas are tender, add the green chiles and raise the heat and cook until most of the liquid has evaporated.  It should remember a very thick stew at this point. 
  • Serve them on warmed tortillas, garnishing with cheese, jalapeños or cilantro, your preference.
