I love homemade ice cream!
I scream, you scream, we all scream for ice cream.
(remember that little jingle from childhood?)
A very good friend of mine (thanks Carol) gave me this recipe years ago and I was scared, "CINNAMON Ice Cream"!
No way would that would be good but I was so very wrong, it is delicious!
In fact, I haven't made any other homemade ice cream since we tasted this one.
The only change I have made to it was changing the nuts. It was originally Cinnamon Walnut Ice Cream but since I live in the middle of pecan orchards, its pecans all the way.
Cinnamon Pecan Ice Cream
I have two different recipes because sometimes I make six quarts and other times I use my Kitchen Aide Ice cream bowl which makes 2 quarts.
Cinnamon Pecan Ice Cream
using the Kitchen aide ice cream maker
makes 2 quarts
2 Cups of Half and Half
2 Cups of Heavy Whipping Cream
1 Cup of Sugar
1/4 teaspoon Cinnamon
1 and 1/3 Teaspoon Vanilla
1/2 cup Pecans
Mix all ingredients in a mixing bowl and stir until the sugar is dissolved.
Remove the ice cream maker bowl from the freezer.
I always keep my Kitchen aide ice cream bowl in the freezer so anytime I decide to have ice cream, it's ready.
Just follow the directions on the ice cream maker to assemble the paddle and the bowl to the mixer.
Start mixer on #1 (the lowest) before slowly pouring in the ingredients.
Let the mixer continue until the ice cream is frozen and the desired consistency is obtained. (about 20 minutes)
Remove and serve. Place any leftovers in a container and store in freezer. This is just perfect amount for my Fellow and I.
But when we are around our kids or grandkids we use our 6 quart ice cream maker and I am including the recipe that makes 6 quarts.
Cinnamon Pecan Ice Cream
Just follow the directions on your ice cream maker
makes 6 quarts
6 Cups of Half and Half
6 Cups of Heavy Whipping Cream
3 Cup of Sugar
3/4 teaspoon Cinnamon
4 Teaspoon Vanilla
1 1/2 cups Pecans
Of course when I eat my ice cream I always add more pecans:)
I live in the Mesilla Valley in Southern New Mexico.
It's considered high desert but since the Rio Grande river runs through this valley from the north to the south we have irrigation water from the river. So there are acres and acres of farmland.
One of the main crops of the valley is Pecans (the other is chile). We have miles of pecan orchards and then just outside of the valley is the desert.
I live on a little Pecan farm but just 1 mile up the road is the desert. It's kinda fun, we have the best of both worlds, beautiful farmland but then a desert to play in with ATV's (aka Quads).
These are the trees along my driveway that grew the awesome pecans for my ice cream. We planted 45 trees when we first bought the property in 1998.
Look, brand new baby pecans for next years ice cream, LOL
