Baby Sandals

Oh just thought I would share a super cute picture of one of my Granddaughters, LOL!  
 Yes, this is her adorable perfectly sweet little foot. 
 But of course I would also love to show off her little shoe.   I expanded my crocheting talents from Barbie clothes for her sister's Barbies to these sweet little shoes.

We are trying to live and eat a little healthier. 
I know I posted a positively sinful Cinnamon Pecan Ice Cream last week, but all things in moderation. (Ok, I must confess I did eat a little more than a "moderate"bowl of ice cream) 
But that's another reason I need to be mindful of what I eat in a normal day.    Even though we are retired, we enjoy a quick little breakfast so we can get on with our day. 
 My sweet hubby has discovered yogurt and granola but as we stood in the grocery store aisle and read each package of granola, we were unable to find one without a zillion calories and fats.  So I searched and searched and then edited and edited and edited numerous granola recipes and this is the result. It is lower in fats and calories and quite yummy on a low fat yogurt.
  • 3 cups rolled oats
  • 1/4 cup slivered almonds
  • 2 teaspoons cinnamon
  • 1/3 cup apple juice
  • 2 Tablespoons honey
  • 1 Tablespoon canola oil
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1/3 cup dried banana chips
1. Preheat oven to 300 degrees.
2. Combine the oats, almonds, and cinnamon in a large bowl. Set aside.
3. Next, combine the apple juice, honey, and canola oil in a small saucepan, and cook over medium heat until the honey is dissolved. Add the vanilla and salt.
4. Drizzle the apple juice mixture over the oats, and mix until just moistened.
5. Coat a large baking sheet with cooking spray and spread the oat mixture evenly on the baking sheet.
6. Bake for 10 minutes. Stir well, and then bake an additional 5-10 minutes, or until golden brown.
7. Remove the baking sheet from the oven, and stir in the dried banana chips. 8. Cool completely , then cover and store.
9. Great served over Yogurt
