Old Fashioned Meatloaf Recipe with Glaze

This is an Old fashioned Meatloaf recipe like the one grandma used to make. This simple meatloaf recipe with a glaze for any weeknight dinner. This recipe could also be made into a ground chicken or round turkey meatloaf.

 This Simple Meatloaf recipe has a few changes from our original with the addition of Worcestershire sauce.  and makes it the meatloaf recipe to save.    And it can also be made using ground turkey or chicken
Do you ever wonder why grandma’s meatloaf tasted extra special?   Maybe she had a few little tricks up her sleeve like using a bit of brown sugar in the glaze recipe?     Or maybe she sautéed the onion until it was sweet and caramelized?   We all know that grandma poured love in all her recipes and especially in her old fashioned meatloaf recipe.

Even though we can’t make a meatloaf with grandmas’ love stirred into it, we can do a few other things.   We added a little brown sugar to the glaze and it does make a big taste difference.    Also, it helps adhere the glaze to this simple meatloaf recipe.   And she was right, caramelized onions really rock this dish.
 

Also, we used a loaf pan to shape the meatloaf and then removed it from the pan to cook on a cooking sheet.   It will cook more evenly but will still have those browned corners that grandma loved.

 

Old Fashioned Meat Loaf Recipe:

Ingredients:

  • 2 pounds of ground beef
  • olive oil
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 Tablespoons Worcestershire Sauce
  • 3/4  teaspoon salt
  • 1/2  teaspoon black pepper
  • 2 eggs
  • 1 1/2 cups of bread crumbs
  • 8 ounce can tomato sauce

Glaze Ingredients:

  • 1/2 cup tomato ketchup
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon brown sugar 

NOTE: This can also make a delicious low-calorie ground turkey meatloaf by substituting ground turkey for the beef

How to make this Simple Meatloaf:

Preheat oven to 350° F.  Sauté  the onions in olive oil until caramelized, add minced garlic, sauté for 1 additional minute.

Remove the onion mixture from heat, add Worcestershire sauce, salt and pepper and allow to cool to room temperature

In a large mixing bowl, combine the ground ground beef,  eggs, bread crumbs, tomato sauce and the cooled onion mixture.

Use your hands to mix the simple meatloaf mixture very well.    Since this is raw meat you might wish to use disposable food prep gloves for this.

Spray a bread loaf pan with cooking spray and press the meatloaf mixture into the loaf pan, press down well to shape.  Only use the bread loaf pan as a mold but not for baking.

Place parchment paper on a large baking sheet.  Carefully turn loaf pan upside down onto the parchment lined baking sheet to remove meatloaf.   Finish shaping the meat loaf by hand.   This step will prevent a soggy meatloaf since it will be baked on the baking sheet.

Mix the meatloaf glaze ingredients,( ketchup, vinegar and brown sugar) in a small bowl.  Combine well.

Pour a little over half of the glaze mixture on the entire meatloaf saving the rest for later. Spread with the back of a spoon until its evenly dispersed.    Place in preheated oven and bake for about 60 minutes until juices run clear and the center temperature is 160 degrees F.    During the last 10 minutes of baking, brush the remaining glaze mixture on the top of the meatloaf.  

 

Old Fashioned Meatloaf Recipe for a simple meat loaf

 

Remove from oven and slice to serve.   This old fashioned meatloaf is our go-to weeknight dinner and we serve it with mashed potatoes or  our garlic mashed potato casserole and green beans.
