This is a quick easy dish that is sure to please.
Roasted Sausage, Peppers and Onions
5 Italian sausages
1 red bell pepper, cut in strips
1 yellow bell pepper, cut in strips
2 onions, cut in chunks
1/2 teaspoon basil
1/2 teaspoon oregano
2 cloves of garlic, minced
1/4 cup of olive oil
salt and pepper to taste
Preheat oven to 450 degrees. Place peppers and onions in a bowl, add basil, oregano, garlic and season with salt and pepper. Add olive oil and toss to coat and spread on a cookie sheet. If using uncooked sausages place them on the sides of the pan, if using pre-cooked sausages add them the final 15 minutes of cooking.
Cook for 30 minutes, tossing the veggies and sausages halfway through cooking.
