Blondies with Pecans and Coconut

Ok, I have to confess these do have a touch of Bourbon in them but only for a little extra flavor:))

Blondies with Pecans and Coconut

  • 2 eggs
  • 1 1/2 cups of brown sugar
  • 1 cup of melted butter
  • 2 tablespoons Bourbon
  • 2 teaspoons vanilla extract
  • 1 1/2 cup of flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups of chopped pecans
  • 1 1/2 cups of coconut
  • 8 oz of white baking chocolate, chopped
1. Preheat oven to 350 degrees. Prepare a 13 X 9 inch baking pan by greasing and adding parchment paper leaving enough to extend over two ends. (this is to lift the cooked blondies out of the pan prior to cutting)
2. In a large mixing bowl, beat eggs and brown sugar, add bourbon, vanilla and melted butter, mix well
3. In a medium size bowl mix flour, salt and baking soda, add slowly to egg mixture, beating until well blended
4. Add pecans, coconut and chopped white chocolate and mix until well combined
5. Spread evenly into prepared pan
6. Bake for 25 minutes until the center is moist but not gooey, place pan on wire rack until completely cool
7. Using the parchment paper remove the entire pan of blondies, slice into bars and serve
