Sweet and Spicy Loaded Chicken Nachos

These loaded chicken nachos are always a hit at our game day celebrations and is much loved for any cocktail party.    And the presentation is so pretty with all the delicious toppings.  These shredded chicken nachos take a bit more time to assemble but they are so worth it.  But we did use store-bought rotisserie chicken to make things a little easier for this spicy nacho. You could also use store-bought guacamole or our Homemade Guacamole if you wish.

How to make loaded chicken nachos:

Ingredients:
  • 16-18oz bag of Tortilla Chips
  • Rotisserie chicken
  • 10 oz bottle BBQ Sauce
  • chipotle chilies in adobo sauce, chopped
  • 1 ½  cups cheddar cheese, grated
  • 1 ½  cups pepper jack cheese, grated
  • guacamole
  • 1 cup sour cream
  • 4 green onions, finely sliced
  • 1 cup sliced pickled jalapeños 

 

Instructions for these ultimate chicken nachos:

  • Preheat oven to 275 degrees
  • In a mixing bowl, combine the shredded chicken and the BBQ sauce (just enough to make it moist) and the chopped chipotle chilies
  • Arrange 48 chips on a baking sheet and top with one tablespoon of the BBQ chicken mixture.
  • In another mixing bowl, combine the two kinds of cheese and mix together. Top each chip with one tablespoon of the cheese mixture and place in the oven for 2-3 minutes until the cheese is melted.
  • Remove from the oven and top each chip with one teaspoon of sour cream and guacamole. Add a slice of jalapeño and sprinkle with the green onions then serve
