Kitchen Substitutions

We all have to pull that rabbit out of the hat, you know those times when you are in the middle of a recipe and realize you don't have the ingredients you thought you had!  Here are just a few easy substitutions that I hope will help you!

If you need:                                          Substitute:

Baking Powder, 1 t.                         1/4 t. soda plus 1/2 t. cream of tarter
Butter, 1 cup                                   7/8 cup vegetable shortening
Chocolate, unsweetened, 1 square   3 T. Cocoa + 1 T. butter
Cornstarch, 1 T.                               2 T. Flour
Garlic, 1 clove fresh                         1/8 teaspoon garlic powder
Herb, fresh 1 T.                                1 t. dried Herb
Honey, 1 cup                                    1 1/4 c sugar + 1/4 cup liquid
Milk, whole 1 cup                           1 c. reconstituted dry milk + 2 T Butter
Milk, Sour 1 Cup                               1 T Vinegar+milk to make 1 cup
Mustard, dry 1 t.                              1 T. prepared Mustard
Sour Cream, 1 Cup               7/8 c. buttermilk+2 T. Whipped Shortening

  1. Last night I used a combination of home-canned tomatoes, green chillies, paprika, chili powder, onion, garlic for bottled BBQ sauce on my meatballs. Loved it and it didn't give me a headache! :-) I have a similar list of substitutes as you have above, in my old Betty Crocker cookbook. So handy!
