Slow Cooker Chicken Stroganoff


This is one of my hubby's favorite dishes and he asks for it often.  It is super easy and perfect for those days, we will be outside working around the Ranch and need a quick dinner ready when we get back to the Ranch House.  I first fixed it when we were building the barn and when we came into the house after a long day, I added the cream cheese, he started the pasta and by the time I came out of the shower, dinner was ready.   Yep, it was my favorite dish that night also!

Slow Cooker Chicken Stroganoff

Ingredients
  • 4 skinless boneless chicken breasts
  • 1 (1.4 oz) envelope of Knorr vegetable recipe mix
  • 1 (10 1/2 oz) can of cream of chicken soup
  • 8 oz cream cheese
  • 1 cup of bowtie pasta (or pasta of your choice)
  • fresh parsley, chopped (optional)
Instructions
1. Place chicken breasts in slow cooker
2. Sprinkle the vegetable recipe mix over the chicken
3. Pour in soup
4. Cook on low for 4-5 hours or until chicken is done
5. Cut up cream cheese and add to chicken and cook on high for an additional 30 minutes to make a creamy sauce
5. Cook pasta according to package instructions
6. Gently stir sauce and serve chicken breast with sauce over pasta
7. Sprinkle with fresh parsley
