Disney’s Ratatouille Recipe -Copycat

This Disney’s ratatouille recipe is made similar to a Provençal Vegetable Tian. This is our version of the movie ratatouille Disney dish.

Zucchini and yellow squash and eggplant are abundant right now in my garden.   I searched my cookbooks and notes and decided the best way to use these beautiful and healthy veggies is in a delicious ratatouille. But even though regular ratatouille has some amazing flavors but it doesn’t always look pretty or appetizing.  
 
But we all know in the movie Ratatouille, the little mice knew how to rock his ratatouille Disney dish. Yep he made it more of a Provençal Vegetable Tian.   It’s a gorgeous way to use all these garden veggies and maybe it’s a little bit of a work of art.  So we are creating a Disney inspired Ratatouille dish today that we know you will love.  Heathy and very flavorful!

This dish has the flavors of ratatouille and the beauty of a tian,  a rainbow of sliced squashes, peppers and eggplant on a bed of tomato paste, sautéd onions and garlic.
 

What’s in our Disney’s ratatouille recipe – copycat version:

Ingredients:

  • 6 ounce can tomato past
  • 1  cup chopped onion
  • 2 Tablespoons fresh minced garlic (6 cloves)
  • 3 Tablespoons olive oil
  • 2 Tablespoons water
  • 1 small eggplant
  • zucchini
  • yellow squash
  • red bell pepper
  • yellow bell pepper
  • salt
  • black pepper

 

Herb Seasoning Ingredients:

  • 2 Tbsp fresh basil, chopped
  • 2 Tbsp fresh Parsley, chopped
  • 2 Tbsp fresh thyme, chopped
  • 1 teaspoon minced garlic
  • 2 Tbsp Olive Oil

How to make our Ratatouille Disney dish:

Preheat your oven to 375° F.  Heat a 2 Tablespoons of olive oil in a small skillet over medium heat.  Then add the chopped onion and sauté until tender and translucent.    Add the minced garlic and sauté for another minute.

Add the tomato paste and water and 1 Tablespoon of olive oil to skillet with onions and garlic.  Mix completely while heating the tomato paste mixture.  Season with salt and pepper.

Spray a round pan (deep dish pie plate works great) with cooking spray.   Spread the tomato paste mixture along the bottom of the dish.

Toss sliced vegetables in a bowl with a bit of olive oil, just enough to very lightly coat them.  Arrange the veggies around the outer edge of the dish alternating the colors.   Drizzle the top of the vegetables with two tablespoons of olive oil and add salt and pepper to taste

Add the fresh herbs and garlic in a small bowl, add olive oil and  mix well.   Spoon the herb mixture on top of  the tian ratatouille vegetables.    Cut a round piece of parchment paper to cover the dish and bake for about 45 minutes until the veggies are tender and roasted.

Serve this ratatouille Disney inspired dish as a side  to any of your favorite recipes.    
 
NOTE Create a 2nd meal with Leftovers:   Leftovers can be chopped and added to 2 cups cooked pasta for the day after. Yum!!

Love this recipe, Evelyn ! For some reason I have never added eggplant to my ratatouille :/ The presentation is also gorgeous !
