Pumpkin Bread with Cream Cheese Frosting


The hubby loves all sweet breads (scroll to the bottom to see more sweet breads) and this time of the year, he would feel cheated if he didn't have a loaf of this Pumpkin Bread with Cream Cheese Frosting.   Last week we cooked all our pumpkins and jack o' lanterns so we have a freezer loaded with fresh pumpkin puree (which is absolutely amazing).   I have plenty of pumpkin puree for my pumpkin pies for Thanksgiving and Christmas and of course for several loafs of this Pumpkin Bread and other holiday treats.   This bread is not overly sweet so the richness of a great cream cheese frosting compliments it perfectly.  But it could be served with or without the frosting, either way it is delicious with coffee, latte or rich hot tea



Pumpkin Bread with Cream Cheese Frosting


Ingredients
    For the Bread
    • 2 cups of flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2 teaspoons of Pumpkin Pie Spice (click thru for homemade)
    • 1 cup packed brown sugar
    • 1/2 cup shortening
    • 2 eggs, beaten
    • 1 cup of pumpkin puree  (click thru for homemade pumpkin puree) (not pumpkin pie filling)
    • 1/4 cup of milk 
    • 1 cup of pecans
    For the Frosting
    • 1 1/2 cups of powdered sugar
    • 4 oz cream cheese
    • 1/2 teaspoon of vanilla
    • 3 tablespoons of milk
    Instructions
    For the bread
    1. Preheat oven to 350 degrees and grease either four little loaf pans or one large (9 X 5 X 3)
    2. In a medium mixing bowl, stir together flour, baking powder, salt , baking soda and pumpkin pie spice
    3. In a large mixing bowl beat the brown sugar with the shortening till well combined, beat in eggs.
    4. Add pumpkin and milk and blend well
    5. Slowly add four mixture and mix well
    6. Stir in pecans
    7. Pour into prepared loaf pan(s) and bake for 55-60 minutes until a wooden pick inserted near center comes out clean.
    8. Remove from pans and let cook on a wire rack.
    For the Frosting
    1. In a medium bow, beat cream cheese, powdered sugar, vanilla and milk until smooth and creamy
    2. Frost the top of the loaf (s)
