How to make the best Grilled BBQ Chicken and Pineapple skewers

These Grilled BBQ Chicken and Pineapple Skewers are not only delicious but also very easy to prepare.   Have you noticed for some unknown reason when you place food on a stick or skewer, it just tastes better?   

We have seen many variations to this dish such as Hawaiian Chicken kabobs or Polynesian kabobs, Sweet and Spicy Kabobs but we are from Texas so we call them BBQ Chicken Kabobs. 

We are using fresh pineapple today which really makes a difference when it is grilled.  Cutting up a pineapple is not that hard and the flavor it brings is well worth the extra time.  We love using this Pineapple de-corer/slicer/peeler/cutter/wedger on Amazon.

We do make things a little easier by using a store bought BBQ sauce, your favorite sauce will do but we like to lean towards a sweet and spicy bbq sauce for these kabobs. 

 These Chicken and Pineapple Kabobs or Skewers come off the grill with a charred smoky flavor.  The grilled white chicken and fresh pineapple are offset by the red bell peppers and onions.  And when they are slathered with BBQ sauce, they create a combo of flavors that makes them the best in our book. 

How to make the best Grilled BBQ Chicken and Pineapple skewers

  • 2 skinless, boneless chicken breast halves, cut into 1-inch cubes
  • 1/2 of a pineapple cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1/2 onion, cut into 1-inch pieces
  • 1/4 cup barbecue sauce
  • 8 skewers
1. Divide chicken cubes, pineapple cubes, bell pepper slices, onion chunks into 8 equal portions for each skewer
2. Thread chicken alternately with the pineapple, bell pepper, onion onto skewers until all are used. (remember if using wooden skewers to soak them for at least 30 minutes prior)
3. Grill on medium-high heat until chicken is no longer pink in the center (about 6-8 minutes on each side)
4. Brush on BBQ Sauce and grill for 1-2 minutes on each side
