Apple Kolaches with Homemade Kolache Dough

Make these Apple kolaches with canned apple filling inside a homemade kolache dough recipe.  We will tell you how to make authentic kolache for other fruit kolache flavors.

In Central and East Texas most doughnut shops sell Apple Kolaches.  These Fruit Kolaches are a Czech pastry and can be either savory or sweet. Most of the sweet kolaches have a fruit filling on top of a rounded pastry.  But some have the fruit inside the dough, kinda like a hand pie.   And an authentic kolache can be made either way.

We use an authentic kolache dough recipe but we make it a little easier using apple pie filling for our apple kolaches.  This fruit kolache is my favorite, it’s not too heavy but it’s not so light that the filling absorbs into the bread.  And if you haven’t tried apple kolaches, you really need to try one today.   So either come on down to Texas or you can make some right here using our recipe on how to make a kolache.
 

What’s in a Texas Kolache

Ingredients for Kolache Dough:
  • 2 1/4 teaspoons active dry yeast
  • 1 cup whole milk, warmed
  • 1/4 cup white sugar
  • 3 cups flour, divided (plus more for kneading)
  • 2 eggs
  • 12 Tablespoons butter (1 1/2 sticks, divided)
  • 1 teaspoon salt
For the Apple Kolaches Filling
  • 21 ounce can Apple Pie Filling

 

Instructions to make Apple Kolaches or any other Fruit Kolache

  • In a large bowl, combine yeast, warm milk, sugar and 1 cup of flour.  Cover and let it rise until doubled in size.
  • Melt the butter and beat the eggs, salt, and half of the melted butter in a large bowl
  • Add egg mixture to yeast mixture and blend.
  • Stir in about two more cups of flour, 1/2 cup at a time. The dough should be soft and moist, but not sticky. Add more flour as needed.
  • On a floured surface, knead the dough until dough is smooth and highly malleable, about 10 minutes.
  • Put dough in a lightly oiled bowl, cover and let rise until doubled in size, about 1 hour.
  • After dough has risen, punch it down and pull off egg size pieces.
  • In your hands, roll pieces into balls and then flatten to about 3-4 inches in diameter.
  • Place 2 tablespoons of the apple pie filling in the center of each piece, then fold over and pinch to seal.
  • Place the kolaches seam side down on a greased baking sheet, cover and let rise for another 30-45 minutes.
  • Preheat oven to 375 degrees.
  • Brush the tops with melted butter and bake until lightly browned about 15-18 minutes.
  • Brush the apple kolaches with the remaining melted butter one more time when they come out of the oven Serve warm.
