  • Line a baking sheet with parchment paper and set it aside.   Preheat your oven to 350 degrees F. 
  • Then in a large bowl, cream together egg and both sugars.
  • If you haven’t set out the butter to soften you can microwave it in a microwave-safe bowl or carefully heat it on the stove to soften. 
  • Add butter and use an electric mixer to beat until smooth. Add melted chocolate chips and mix until all ingredients are well-incorporated and set aside. 
  • In another bowl, sift together all dry ingredients: flour, cocoa powder, baking soda, and salt.
  • Slowly add dry ingredients into wet ingredients and mix until cookie dough forms.
  • Using your spatula gently fold the caramel chips into the cookie dough until well incorporated.
  • Use a cookie scoop (approx. ¼ cup) to scoop cookie dough onto the lined baking sheet.
  • Bake the chocolate cookies with caramel chips for 11-14 minutes then remove them from oven and allow to cool. 
  • In a microwave-safe bowl, microwave the white candy melts in 30-second intervals until completely melted. Be sure to stir between each interval.
  • Pour melted candy melts into a piping bag and drizzle onto each cookie.
  • Sprinkle each cookie with crushed peppermint.
  • Allow them to set before serving. Enjoy!
