  • In a candy melts pot or in the bowl of a double boiler over low/med heat melt the candy melts and 1 tsp shortening until completely melted. Add additional 1-2 tsp shortening to get a nice liquid texture. Note: If the melts are too thick they won’t coat the cookies and marshmallow smoothly.
  • Once you have achieved the desired consistency, use a chocolate dipping tool or your fingers to dip the cookies. Press the top of the cookie into the melted chocolate until the sides are covered. Remove & place uncovered side down on a cooling rack, wax paper, or parchment paper. Repeat with remaining cookies until they are all covered.
  • Place a marshmallow on a toothpick or chocolate dipping tool and dip in the melted candy. Also you could also use a spoon to spread the candy to completely cover the marshmallow. Place the coated marshmallow in the center of one of the covered cookies to make the brim of these cookies hats. Repeat with all the remaining marshmallows and allow the cookies and marshmallows to cool completely until chocolate is set.
  • Pinch of a piece of the black fondant and roll it out into a snake like shape about 3-4 inches long. Then gently press it to flatten into a belt. Carefully wrap it around the base of the marshmallow to form a hatband, use scissors or a sharp knife to cut off an excess.
  • Take a gold cake sequin and press it into the fondant to create a buckle. Then roll a tiny bit of the fondant and press it into the center of the sequin. Use a small bit of water if you have issues getting the fondant and sequins to stick together. Add sequin belt buckles to the rest of the Leprechaun hats. If these St Patrick’s day cookies are not served immediately, store them in an airtight container.
