Cast Iron Skillet Cheesy Potatoes

Ingredients

  • 5 cups potatoes peeled and cubed ,approximately 5-6 potatoes
  • 4 slices bacon
  • 1 onion diced
  • 3 cloves garlic smashed and sliced
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 Tablespoon ranch seasoning
  • 2 cups shredded cheese

Instructions

  • Bring your large pot of water to a boil over high heat. And add the cubed potatoes and cook for 5 minutes until they are fork tender. Pour in a colander to drain then rinse the potatoes.
  • In a large cast iron skillet over medium heat, cook your bacon until crispy. Remove the bacon to a paper-towel lined plate.
  • Add the chopped onion to your hot skillet, for 2 minutes. Then add the garlic and potatoes. Cook until potatoes, onion and garlic are well-browned, stirring rarely.
  • Meanwhile in a small mixing bowl, combine the sour cream, milk, ranch seasoning. Mix well. Add 1 cup of the shredded cheese to the cream mixture and gently combine.
  • Stir the sour cream mixture into the skillet potatoes and continue to cook over medium heat for 3-4 minutes, until sour cream mixture has thickened.
  • Sprinkle the remaining cheese on top of the potatoes. And chop the reserved bacon and sprinkle on top.
  • Allow the cheese on your cast iron skillet potatoes and onions to melt before serving. Serve these right out of the cast iron skillet as a side dish.
