  • Prepare the pasta according to package directions in a pasta cooker or a large pot of water. Note: Do not rinse your pasta after draining.
  • While the pasta is cooking, place a medium-sized saucepan over medium heat and add the butter. Once the butter is hot, add the garlic and cook for 2 minutes until fragrant being careful not to scorch it.
  • Add the heavy cream, salt, pepper and Italian seasoning to your Alfredo buttery garlic mixture. And increase the heat to medium-high and bring the mixture to a boil for 2 minutes, whisking constantly. Then reduce heat to medium-low.
  • Add the shredded Parmesan cheese and whisk until completely melted.
  • Taste and adjust your seasoning, as well as the consistency, if needed. Consistency can be adjusted pretty easily in several ways.

  • Toss the cooked pasta with the homemade Alfredo sauce and serve immediately. And you can add additional Parmesan and fresh parsley, if desired.

Notes

If your Alfredo Sauce is too thin try adding heavy cream and bringing it to a simmer. Be sure to whisk it constantly so you don’t scald the cream. Continue simmering and it will slowly thicken. Or add additional parmesan cheese to thicken, either way will keep the integrity of the basic sauce.
If sauce is too thick you can add either milk or pasta water and bring it to a simmer. Continue to simmer until it reaches your desired consistency.
