  • In a medium-sized bowl, mix together the brown sugar, ketchup, soy sauce, ginger and garlic. Add enough chicken stock to make the sauce easy to spread. Reserve 1/2 of the huli huli bbq sauce to use for basting in a separate bowl.
  • Place the chicken drumsticks in a casserole dish or other marinade container and pour half of the Huli Huli sauce on top. Remember: To reserve the other half of the huli huli bbq sauce to use for basting in a separate bowl. Cover and refrigerate for at least one hour, or overnight.
  • Remove marinaded drumsticks from the refrigerator and allow to come to room temperature about 30 minutes to an hour.
  • Set your indoor grill or grill pan over medium-high heat. Rub or spray cooking oil on the pan and wait until it gets hot. Use tongs, place the chicken on the grill, being sure not to have the them touching.
  • Throughout the grilling process, use a pastry brush or BBQ mop to apply the reserved sauce to the chicken. Sear the chicken legs on each side, approximately 4-6 minutes.
  • Reduce the heat to medium and continue to cook until the huli huli chicken drumsticks reaches an internal temperature of 165° F.

Notes

Note: if you put cold chicken on the grill, the heat dries out the meat on the outside before the inside is done. So always allow to come to room temps before cooking.
