Soft No Knead Dinner Rolls

This soft, no knead, dinner roll recipe is the one you have been looking for.  It makes your favorite old fashioned soft and buttery yeast rolls without kneading.

Ingredients

  • 1 rounded tablespoon of dry active yeast
  • 2 Tablespoons Sugar
  • ½ cup lukewarm water
  • 4 ½ cups all purpose flour
  • 1 cup lukewarm milk
  • 1 ½ teaspoon salt
  • ½ cup butter melted
  • 2 eggs
  • Melted Butter for glazing

Instructions

  • Add yeast and 1 Tablespoon sugar into a small bowl and pour in the lukewarm water. Let set for about 5 minutes until frothy.
  • Meanwhile in a different large bowl add the flour, salt and the remaining 1 Tablespoon sugar.  And use a dough whisk or fork  to mix well.
  • Pour the milk, eggs, and melted butter into the flour mixture.
  • Add the frothy yeast sugar mixture and use your dough whisk to mix well.
  • When your no knead dinner roll dough is well mixed, cover with a clean kitchen towel and set in a warm place to proof for 2 hours. 
    NOTE: I usually place my dough in the oven with only the oven light on.  It creates the perfect warmth to rise the yeast dough.   BE SURE NOT to turn on the oven even if you have to place a reminder post-it note on the oven controls.
  • Once the dough has risen for 2 hours, remove the towel and punch the dough down.   No kneading required.
  • Dust flour on your pastry mat and turn out the dough.  Form the dough into a log about 12-15 inches long.
  • Use a dough cutter to cut the dough log into 12 equal portions.  Roll each portion into a ball, pulling the sides down and under to shape roll and make the top as smooth as possible.
  • Line a deep 9 X 13 baking pan with parchment paper leaving extra parchment paper overhanging the sides to lift the rolls out of the pan.  Place the rolls into the pan and spray the tops with a non-stick cooking spray.  Lightly cover with plastic wrap leaving room for the rolls to rise.  Cover with a kitchen towel and place in a warm place to rise for 45 minutes.
  • Preheat oven to 390° F.  After your yeast rolls have risen, remove the towel and plastic wrap and place in the preheated oven. Bake for 15 minutes until golden brown.  You can test for doneness my tapping on the rolls and if it sounds hollow it's done.
  • Remove your soft no knead dinner rolls from oven and brush the tops with butter.  Carefully lift the rolls out of the hot pan using the parchment paper and serve.
