Ingredients

  • 2 cups blueberries fresh or frozen
  • ½ cup sugar
  • 1 cup water
  • 1 Tablespoon cornstarch
  • 2 Tablespoons water
  • whole berries for serving, optional

Instructions

  • In a medium saucepan, bring water, sugar, and berries to a boil. Stir occasionally.
  • Reduce heat and simmer for 10 minutes.
  • Combine 2 Tablespoons water and cornstarch in a small jar with a lid and shake well. (Mason jar works great)
  • Add the water-cornstarch mixture to simmering berries
  • Stir continuously as the sauce thickens and the blueberries burst. Serve over pancakes or waffles adding additional berries if desired.
  • Store covered in the refrigerator for up to two weeks.
