Line a baking sheet with parchment paper and set it aside. Preheat your oven to 350 degrees F.
Then in a large bowl, cream together egg and both sugars.
If you haven’t set out the butter to soften you can microwave it in a microwave-safe bowl or carefully heat it on the stove to soften.
Add butter and use an electric mixer to beat until smooth. Add melted chocolate chips and mix until all ingredients are well-incorporated and set aside.
In another bowl, sift together all dry ingredients: flour, cocoa powder, baking soda, and salt.
Slowly add dry ingredients into wet ingredients and mix until cookie dough forms.
Using your spatula gently fold the caramel chips into the cookie dough until well incorporated.
Use a cookie scoop (approx. ¼ cup) to scoop cookie dough onto the lined baking sheet.
Bake the chocolate cookies with caramel chips for 11-14 minutes then remove them from oven and allow to cool.
In a microwave-safe bowl, microwave the white candy melts in 30-second intervals until completely melted. Be sure to stir between each interval.
Pour melted candy melts into a piping bag and drizzle onto each cookie.
Sprinkle each cookie with crushed peppermint.
Allow them to set before serving. Enjoy!
