Ingredients

  • 4 cups cooked chicken breast meat chopped
  • 3 Tablespoons red onion chopped
  • cup basil pesto
  • 2 Tablespoons mayonaise
  • ½ cup jarred roasted red peppers chopped (optional)

Instructions

  • Combine the basil pesto and mayonnaise in a mixing bowl and mix well.
  • Add the chicken, chopped onion and roasted red peppers (if using) and toss to coat everything.
  • Serve
