Ingredients

mashed potatoes
1
egg
1
green onion
sliced
1
cup
cheddar cheese
grated
1
cup
flour
butter
salt
to taste
black pepper
to taste
chives for garnish
if desired
Instructions
Mash potatoes with a
potato ricer
and combine with onion, egg, cheese, flour in a large bowl
Scoop up 1/3 cup of the mixture, shape into balls and roll each into flour and flattened into patties
Melt butter in large skillet over medium heat
Fry each patty in the skillet about 5 minutes each side until golden brown, salt, and pepper to taste
Snip fresh chives with
herb scissors
and garnish prior to serving
