Ingredients

  • 2 boneless skinless Chicken Breasts cut into 1-inch cubes
  • 1/2 pineapple cut into 1-inch chunks
  • 1 red bell pepper cut into 1-inch pieces
  • 1/2 onion cut into 1-inch pieces
  • 1/4 cup barbecue sauce (Sweet Baby Ray's)
  • 8 skewers

Instructions

  • Divide chicken cubes, pineapple cubes, bell pepper slices, onion chunks into 8 equal portions for each skewer
  • Thread chicken alternately with the pineapple, bell pepper, onion onto skewers until all are used. (remember if using wooden skewers to soak them for at least 30 minutes prior)
  • Grill on medium-high heat until chicken is no longer pink in the center (about 6-8 minutes on each side)
  • Brush or Mop on BBQ Sauce and grill for 1-2 minutes on each side
