boneless chuck roast

large red potatoes
quartered

peeled and cut into 2 inch chunks

cut into 2 inch pieces

garlic cloves
minced about 2 tablespoons

beef broth

flour

tomato paste

springs of fresh rosemary sprigs

springs of fresh thyme springs
Instructions
Salt and pepper the roast and allow to sit while preparing the vegetables
Add potatoes, carrots, onion, celery and garlic in the bottom of a large slow cooker
In a bowl or
large measuring cup
, whisk together beef broth, flour and tomato paste, pour over vegetables
Add herb springs
Place roast on top of vegetables and seasonings
Cook on low for 7 hours or high for 3 1/2 hours
