In a large mixing bowl, (we use our aluminum mixing bowl and kitchen-aide mixer) cream the softened butter and sugar Add the eggs and beat until mixed. Add mashed bananas and vanilla and mix
In a separate bowl, combine flour, baking soda, cinnamon, ginger, nutmeg, cloves and salt and mix well
Add the dry ingredients to the banana mixture and beat well
Pour the mixture into your prepared baking sheet and bake for 20 minutes or until it springs back slightly to the touch.
Remove from oven. and allow to cool completely before starting the frosting
For the Frosting
Measure out the powdered sugar into a large mixing bowl. Add the butter and cream cheese and mix well then add the vanilla and mix. Your cream cheese frosting should be creamy and well combined.
Using a cake frosting spreader, spread over the entire banana sheet cake using the entire bowl of frosting.
Place in fridge and chill for at least an hour. Remove from fridge and slice into 36 frosted banana bars
