- 4 cups cooked chicken breast meat chopped
- 3 Tablespoons red onion chopped
- ⅓ cup basil pesto
- 2 Tablespoons mayonaise
- ½ cup jarred roasted red peppers chopped (optional)
Combine the basil pesto and mayonnaise in a mixing bowl and mix well.
Add the chicken, chopped onion and roasted red peppers (if using) and toss to coat everything.
