Mango Pico de Gallo

Mango pico de gallo with red pepper, jalapeños and red onions. This mango pico salsa is colorful and delish. A great fruit salsa for salmon.

Equipment

Ingredients

  • 2 fresh Mangos diced (or one 15 ounce can diced mangos)
  • ½ cup red onion chopped
  • 3 jalapeños chopped (for less spice use less jalapeño)
  • ½ cup red bell pepper
  • 2 cloves garlic minced
  • 2 Tablespoons rice wine vinegar
  • salt to taste

Instructions

  • Start by adding the chopped mangos, bell pepper, jalapeños and red onions to a mixing bowl.
  • Add the minced garlic and spoon the rice vinegar over everything. Toss or gently stir to combine and add salt to taste.
  • Place in refrigerator and allow the flavors to marry or come together for at least an hour. Then serve

Notes

Even though we mainly serve it with our Cedar Planked Grilled Salmon Fillets, it is delicious served with tortilla chips. Or top a grilled chicken breast or even grilled pork chops with plenty of this colorful and tasty mango pico salsa.
