Start the spiced caramel apple cider by making the cinnamon syrup. Add the water, sugar, and cinnamon sticks in a small saucepan and stir until the sugar is dissolved. Heat the ingredients over medium heat, bringing the liquid to a simmer. Continue simmering for five minutes, stirring often.
Remove the cinnamon sticks from the pot and transfer the cinnamon syrup to a jar or other container.
Combine the apple juice with two tablespoons of the cinnamon syrup in a small saucepan. Heat this spiced apple cider, over medium low heat until the juice begins to simmer.
Drizzle caramel syrup around the sides of two clear glass coffee cups, allowing some to puddle in the bottom.
Divide and pour the hot spiced apple cider between the caramel drizzled clear cups.
Top with whipped cream and drizzle more caramel syrup on top before serving. Also you can sprinkle cinnamon on top.
