  • Preheat your oven to 350° F. And line a sheet pan with parchment paper.
  • In a medium mixing bowl, combine the flour, salt and soda and set aside.
  • In a large mixing bowl add the butter and peanut butter and gradually beat in the sugar and brown sugar until well combined.
  • Add the egg and vanilla and mix well. Slowly add the flour mixture and continue to beat until everything is combined.
  • Shape dough into 1 inch balls and place on the baking sheet. Using your finger or a spoon, press an indentation in the center of each cookie.
  • Place in preheated oven and bake for 8 minutes and remove from oven, spoon a dab of jelly into each depressed center, mounding it slightly.
  • Return cookies to oven and bake for 3-4 minutes until jelly is set. Remove from oven and allow to cool on baking sheet for 2-3 minutes and place each cookie on a cooling rack.
