Instructions
Preheat your oven to 350° F. And line a sheet pan with parchment paper.
In a medium mixing bowl, combine the flour, salt and soda and set aside.
In a large mixing bowl add the butter and peanut butter and gradually beat in the sugar and brown sugar until well combined.
Add the egg and vanilla and mix well. Slowly add the flour mixture and continue to beat until everything is combined.
Shape dough into 1 inch balls and place on the baking sheet. Using your finger or a spoon, press an indentation in the center of each cookie.
Place in preheated oven and bake for 8 minutes and remove from oven, spoon a dab of jelly into each depressed center, mounding it slightly.
Return cookies to oven and bake for 3-4 minutes until jelly is set. Remove from oven and allow to cool on baking sheet for 2-3 minutes and place each cookie on a cooling rack.
