Ingredients

  • 2 ribs celery sliced
  • 1 whole carrot chopped into bite size pieces
  • 1/2 onion chopped
  • 2 Tablespoons butter
  • 1 lb cooked chicken breast chopped (can also use cooked turkey)
  • 1 can cream of chicken soup
  • 1/4 cup sour cream
  • 1 package Stovetop Stuffing Mix or leftover Thanksgiving dressing

Instructions

  • Saute celery, carrots, and onions in butter until soft in a large skillet over med-high heat. 
  • Prepare the stuffing according to package directions and set aside.
  • Gently mix cooled veggies, chicken, soup and sour cream in a large bowl.
  • Pour the chicken and veggie mixture into an 8 X 8-inch baking dish and top with stuffing.
  • Bake 30 minutes at 400 degrees.
