For the Spicy Dipping Sauce

  • Preheat your oven to 425 ° F.   Peel the sweet potatoes and slice them into slices, then cut the slices into fries. 
  • Place your cut sweet potato fries in a gallon size ziplock bag.   Sprinkle with the corn starch, seal the baggie and shake to evenly coat them with the corn starch. 
  • Drizzle olive oil on a large baking sheet and add the corn starch covered fries. You may need two baking sheets to allow room to spread out the fries.
  • Spread the fries around baking sheet in a single layer using two baking sheets if needed.   Sprinkle with salt and freshly ground black pepper. Place in your preheated oven and bake for 15 minutes, stir or flip the fries and bake for 15 additional minutes until the fries are browned. 
  • While the potatoes are cooking make the spicy dipping sauce.  Whisk together the ketchup, Worcestershire sauce, horseradish, brown sugar, cayenne pepper and garlic salt in a small mixing bowl.   
  • Remove the sweet potato fries from oven and and immediately sprinkle with sea salt and parsley.  
  • Serve the fries with the spicy dipping sauce
