Preheat your oven to 375° F and line a large baking sheet with parchment paper. This keeps everything from sticking and makes cleanup a breeze!
In a medium mixing bowl, whisk together the 4 large eggs, ¼ cup milk, salt, and black pepper until everything is well combined and slightly frothy. This helps create those light, fluffy scrambled eggs your family will love.

Fold the other half of the biscuit dough over the top of the egg, bacon, and cheese filling to create a half-moon shape. Gently press along the edges with your fingers to seal the seams well.

Place the stuffed breakfast pockets onto the prepared parchment-lined baking sheet, spacing them a couple of inches apart so they have room to bake evenly. Carefully transfer the baking sheet to your preheated 375° F oven.
Bake the pockets in your preheated 375° F oven for 12 to 15 minutes, or until they turn a beautiful golden brown. Keep an eye on them toward the end—every oven is a little different, and you want that perfect flaky, lightly toasted look.
Once they’re nicely golden, carefully remove the baking sheet from the oven. Allow the egg and bacon hot pockets to cool on the baking sheet for a few minutes before serving. They’ll be nice and hot inside, so this short cooling time keeps the filling from being too runny and prevents any burned tongues.
