Boozy Watermelon Popsicles

Make these boozy watermelon popsicles with rum, watermelon, mint and agave.  Boozy popsicles are simply popsicles made for adults that contain alcohol.   These frozen watermelon mojito popsicles are perfect for a hot summer day.

  • Place the watermelon cubes into your blender and puree.  Add the rum, agave, and mint extract and blend until smooth.   Pour the watermelon mojito mixture into popsicle molds.  Place in freezer and freeze overnight or at least 12 hours.
  • Remove the mold from the freezer and turn the mold upside down.  Run hot water over the bottom of one popsicle while gently pulling on the stick until the boozy watermelon popsicle is removed.  Repeat for all the rest.  Enjoy.
