Place the cubed watermelon into your blender and puree until completely smooth.
Add the rum, agave nectar, and mint extract. Blend again until everything is well combined and the mixture is silky smooth. Give it a quick taste — this is the perfect time to adjust the sweetness or mint flavor if needed.
Carefully pour the boozy watermelon mojito mixture into your popsicle molds, leaving a small amount of space at the top to allow for expansion as they freeze.
Place the filled molds in the freezer and let them freeze overnight, or for a minimum of 12 hours, until completely firm.
Once your popsicles are fully frozen, remove the mold from the freezer and turn it upside down over a plate or cutting board.
Run warm (not hot) water over the bottom of one mold cavity for 5–10 seconds while gently pulling on the stick. The popsicle should slide out smoothly. Repeat with the remaining popsicles.Helpful Tip: If they don’t release easily, run the warm water for just a few seconds more. Avoid using hot water, as it can melt the outside of the popsicles too quickly.
