Green Chile Cheese Bread
Roasted Hatch green chiles and cheddar cheese are baked into this soft homemade Green Chile Cheese Bread. An easy recipe that makes two loaves.

- 2 packages active dry yeast
- 1/4 cup warm water
- 2 cups lukewarm milk
- 1/2 cup butter room temperature
- 2 tablespoons sugar
- 2 teaspoons salt
- 2 cups chopped roasted Hatch green chiles well drained
- 2 cups shredded cheddar cheese
- 7 cups all-purpose flour plus more as needed
Dissolve the yeast in the warm water.
Add the milk, butter, sugar, and salt. Stir to combine.
Mix in the green chiles and cheddar cheese.
Add 3 cups of flour and mix well. Continue adding flour gradually until a soft dough forms.
Knead until the dough is smooth and elastic.
Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 1/2 hours.
Divide the dough in half and place each half into a greased loaf pan.
Cover and let rise again for about 45 minutes.
Bake at 375°F for about 45 minutes.
Remove the loaves from the pans and cool on wire racks before slicing.
- Drain jarred or canned green chiles very well before adding them to the dough.
- Add the flour gradually. You may need a little more or less depending on the moisture in the chiles.
- Let the bread cool before slicing so the crumb can finish setting.
One loaf can be frozen once completely cooled.
