2 tablespoons olive oil 1 medium onion chopped 1 red or orange bell pepper chopped 2 jalapeños seeded and chopped fine 2 garlic cloves minced 32 oz beef broth 2 15 oz cans black beans well rinsed and drained 1 15 oz can diced tomatoes with juices 1 cup sour cream for serving 1 jalapeño thinly sliced lengthwise for garnish
In a 4 quart stockpot over medium-high heat, add olive oil, onion, bell pepper, jalapeño, garlic and salt Cook, stirring occasionally, for 3 to 4 minutes until the onions and bell peppers are soft
Add the beef broth, beans, and tomatoes and raise temperature to high
As soon as the soup comes to boil, reduce temp to low, simmer, uncovered for 25 to 30 minutes and until liquid is reduced by one third
Serve with the sour cream and the sliced jalapeño.
