Mini McGriddle breakfast sandwiches

Copycat mini McGriddle breakfast sandwiches made with mini pancakes, sausage patties, and baked eggs. An easy breakfast you can make at home with a few simple shortcuts.

Ingredients

  • 24 frozen mini pancakes
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 12 frozen sausage patties

Instructions

  • Preheat the oven to 350°F. Line a sheet pan with parchment paper and arrange the 24 mini pancakes in a single layer. Cover them with another sheet of parchment paper and set the pan aside for now.
    I like warming all the pancakes together this way instead of standing over the stove heating them a few at a time.
  • Whisk the eggs and milk together in a mixing bowl. Add a little salt and pepper to taste and whisk until everything is well combined.
  • Spray 12 cups of a mini muffin tin well with nonstick cooking spray. Divide the egg mixture evenly between the cups.
  • Place the muffin tin in the oven and bake the eggs for 10 minutes. After those first 10 minutes, place the sheet pan of pancakes in the oven too. Continue baking both pans for another 10 minutes. The eggs will bake for about 20 minutes total, while the pancakes warm for about 10 minutes.
    The eggs should be completely set before you remove them from the oven.
  • While the eggs and pancakes are in the oven, cook the sausage patties in a large skillet over medium heat according to the package directions. Transfer the cooked sausage to a paper towel-lined plate while everything else finishes baking.
  • Set 12 of the warm mini pancakes on your work surface or serving platter. Place one sausage patty on each pancake.
  • Carefully remove the baked eggs from the muffin tin and place one on each sausage patty.
  • Finish each sandwich with another mini pancake on top. Serve them while everything is still warm.

Notes

  • Add a small slice of cheddar or American cheese if you like.
  • Bacon or ham can be used in place of the sausage.
  • For a sweeter sandwich, add a small drizzle of maple syrup before adding the top pancake.
  • Homemade mini pancakes can be used instead of frozen pancakes.
