  • Peel the sweet potatoes using a vegetable peeler. For the best results, choose medium to large sweet potatoes that are relatively straight — they’re easier to cut into even fries.
  • Slice each sweet potato lengthwise into ¼-inch thick slices. Then cut those slices into fry-shaped strips, about ¼ to ½ inch wide. Try to keep the fries as uniform in size as possible so they cook evenly. (Thinner fries will get crispier, while slightly thicker ones stay softer in the center.)
  • Place your cut sweet potato fries into a large gallon-size Ziploc bag.
  • Sprinkle 1–2 tablespoons of cornstarch over the fries (depending on how many potatoes you’re using). Seal the bag, then gently shake and turn it until all the fries are evenly coated with a light layer of cornstarch.
  • Drizzle a light coat of olive oil onto one or two large baking sheets and spread it evenly with a pastry brush or your fingers.Alternatively, for easier cleanup and to prevent sticking, line your baking sheet(s) with parchment paper — no oil needed on the paper itself.
  • Add the cornstarch-coated sweet potato fries to the prepared baking sheet(s) in a single layer, making sure the fries are not touching or overcrowded. This gives them room to crisp up properly. You will likely need two baking sheets depending on how many sweet potatoes you’re cooking.
