Preheat oven to 425 degrees. Slice 2 zucchini squash into ¼ or ½ inch slices using a sharp knife or a kitchen mandolin
Mix breadcrumbs, Parmesan cheese, season salt, garlic powder and cayenne in a medium bowl.
Place milk in a shallow bowl and spray a sheet pan with cooking spray.
Dip zucchini slices in milk, and dredge in breadcrumb mixture.
Place these zucchini slices on prepared sheet pan and bake at 425 degrees for 15 minutes. Carefully Flip each zucchini chip halfway through the cooking time to brown the other side.
