This is how to make Bellini with a strawberry fruit puree and topped with a sparkling wine
- 1 pound (3 cups) Fresh Strawberries
- 2 Tablespoons Brandy
- 1/4 cup powdered sugar
- 1 bottle Sparkling wine or Champagne
Remove green tops from strawberries and cut strawberries into halves or quarters
Blend strawberries, powdered sugar, and brandy in a blender until very smooth
Fill champagne flutes about 1/4 with the strawberry mixture, add sparkling wine (champagne), give it a quick stir and then add more sparkling wine (champagne) till full
