We normally eat baby carrots fresh with a dip or chopped into salads but these Honey Glazed baby carrots are the exception.  The hubby is not crazy about cooked carrots but I won him over by cooking these candied carrots and walnuts.

We have discovered how to steam carrots in instant pot and then glaze them by switching to the saute function.   And make the best candied carrots.   These would be a quick and easy side dish for your Thanksgiving dinner or for a weeknight dinner. 

 

Honey Glazed Baby Carrots recipe ingredients:

 

Honey glazed baby carrots, candied carrots

 

  • 1 cup of water
  • 1 lb baby carrots
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 3 tbsp honey
  • Salt and pepper to taste
  • ½ cup walnuts, chopped

 

How to steam carrots in instant pot:

Pour water in the inner pot of your Instant Pot and add baby carrots.   Cover the Instant Pot with its lid and set on high pressure for 2 minutes.   Once the time is up, allow for a 5 minute NPR (natural pressure release).     Remove lid and drain water from the inner pot.

 

How to make candied carrots:

Set your Instant Pot to saute function and add butter, brown sugar and honey to the steamed carrots.  Stir until all ingredients have melted into the carrots.  Turn off the saute function.

 

Chopped Walnuts

 

Chop the walnuts into small pieces to top the candied carrots

Serve the candied carrots in a large bowl and season with salt and pepper.  Garnish with chopped walnuts and serve and enjoy!
