Wouldn’t it be fun to serve these Rainbow Cupcakes for a fun St Patrick’s Day dessert? We made this rainbow in a jar St Patrick’s Day treat from a boxed cake mix to celebrate a day when we all wish to be Irish. I have always had so much fun with St. Patricks Day, from giving my son green milk to sticking clovers in my girl’s hair. It doesn’t take long to make these fun cupcakes. You can use a white cake mix and follow the directions of the box to make the cake batter. Divide the cake batter between 5 different small bowls. In each bowl of batter add a few drops of food coloring in 5 different colors of the rainbow. Then add a spoonful of each colored batter in each pint mason jar and bake in a water bath.
