Like most Southerners I grew up with black eye peas but I have never tried them cold until I found this dish. This Cowboy Caviar, sometimes called Texas Cowboy salad, can be made with different ingredients. For instance, I have a friend that adds avocado to hers, sounds great, doesn’t it?

I choose to make my caviar or as some of my friends call it, hillbilly caviar with some basic ingredients, that really add a variety of flavor. And it’s seasoned with a zesty dressing and plenty of salt and pepper. And it’s sure to be welcome at any picnic or cookout.
Cowboy Salad Recipe:

Ingredients:
- 1 cup sweet onion chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 1 15 oz can black eyed peas drained and rinsed
- 1 15 oz can black beans drained and rinsed
- 1 15oz can or corn kernels drained and rinsed
- 1 cup tomatoes diced
- 2 large jalapeños, diced and seeds removed or not
- 1 1/4 cups zesty Italian dressing
Instructions:
- Place all the ingredients into a large bowl and stir well.
- Refrigerate for about two hours before serving.
This Cowboy Caviar or Texas caviar can be served with chips or as a side dish. I know it goes great with BBQ brisket and I’m sure that’s the way most self-respecting Texas eat it. Yeppers, we are partial to dishes that can be served with BBQ.

This looks so delicious, Evelyn ! I do not think I have ever had black eyed peas before, but I have seen some in the supermarkets. Interesting name – the Caviar bit !
