These marinated cucumbers make a great picnic dish or potluck side.
Summer in the garden means an incredible overabundance of fresh tomatoes, cucumbers and zucchini and yellow squash. We are always looking for many ways to use these veggies fresh, we can our tomatoes to use all year and have a zillion recipes for zucchini. But it’s nice to not only pickle cucumbers but have several recipes to incorporate these vegetables in our daily meal plan.
Amazon has a book, “Delightful Cucumbers to suit all tastes” written by Gordon Rock. It has nothing but cucumber recipes that are fun and unique.
Fresh Cucumbers marinated with crisp onions
- 1/4 cup sugar
- 1/4 cup vinegar
- 1/2 teaspoon of salt
- 1/4 teaspoon of celery salt
- 2 cups cucumbers peeled and sliced
- 1/4 cup sliced onions
- Fresh parsley optional
