I remember as a child, going out to the garden with a salt shaker and enjoying a few fresh tomatoes right off the vine.   Juice running down my chin and all the great smells of tomato vines in the air, it was the “Taste of Summer”.  And my mom served sliced tomatoes at just about ever meal including breakfast.  Our garden over ran with this delicious fruit.

But sometimes you wish to shake it up a little so we came up with this dish of  topping fresh tomatoes with balsamic vinegar and adding feta cheese just prior to serving.   It was amazing.  The tomatoes do taste better if you allow a few minutes for the flavors to marry but either way, its delicious.   .a toAnd
 

How to prepare these balsamic tomatoes and feta

Ingredients:

  • 3 large fresh tomatoes, sliced
  • 4 Tablespoons of balsamic vinegar
  • 2 tablespoons of olive oil
  • 1/4 cup of crumbled feta cheese
  • salt and pepper
 

Instructions:

  • Arrange the tomato slices on a serving dish.
  • Drizzle the balsamic vinegar and olive oil over the top
  • Salt and pepper to taste
  • Loosely cover and place in the refrigerator for at least 30 minutes.
  • Prior to serving, sprinkle the feta cheese on top
