Hearty Sausage Minestrone Soup

Make this homemade Hearty Sausage Minestrone Soup with fresh vegetables. It’s a thick vegetable soup with pasta and Italian sausage.   This easy Minestrone Soup is delicious served with crusty bread and makes a perfect comfort meal. 

 
 
Hearty Sausage Minestrone Soup
 
I have always heard that soup is good for the soul. This is so true, soup just fills you with comfort and is just plain good foodies. It’s total comfort and satisfaction.   
 
There is no set recipe for Minestrone Soup, the term Minestrone  is normally used to describe a thick vegetable soup usually with pasta.   Please please feel free to exchange the vegetables according to your likes.  This list is just a suggestions. This Italian soup is just whole pot of goodness for the soul.  And it’s best serve with Crunchy Bread and topped with fresh Parmesan cheese.

What’s in this Hearty Minestrone Soup:

Ingredients:

  • 2 link Italian Sausage (your favorite)
  • ½  cup of onion, chopped
  • 2 garlic cloves, minced
  • 1 cup potatoes, cut into 1/2 inch cubes
  • ½  cup of carrots, cut into 1/2 inch cubes
  • ½  cup of diced red bell pepper
  • 48 oz chicken broth
  • 2-80z cans of tomato sauce
  • ½  teaspoon dried basil
  • 1 teaspoon of dried oregano
  • 2 cups of pasta (your choice)
  • ½  cup canned garbanzo beans
  • ½  cup corn
  • ½  cup or green beans or green peas

 

Instructions for Minestrone Soup:

  • Slice sausage into 1/2 inch rounds, sautĂ© in dutch oven or large soup pot until just browned. Remove the sausage pieces with a slotted spoon retaining the grease, set the sausages aside and keep warm
  •  In the same pot sautĂ© the onions, carrots and potatoes in the grease for about 5 minutes on med heat. Add bell peppers and garlic, sautĂ© for 2 minutes.
  • Add chicken broth, tomato sauce and herbs. Bring to a slow boil, add pasta and cook for 8 minutes.
  • Add the garbanzo beans, corn and green peas or green beans and simmer for 3-5 minutes.
  • Serve and enjoy
