Slow Cooker Green Beans and Potatoes

This is an easy seasoned slow cooker green beans and potatoes recipe.   Place fresh green beans and potatoes in crock pot, add seasonings and let it cook.    This is a country style down home recipe that is made with garden fresh green beans and potatoes.

This is one of those easy recipes where you chop and drop everything into a slow cooker, set it and forget it.   These fresh green beans and potatoes in a crock pot has the amazing flavor of bacon and is seasoned with plenty of salt and black pepper.

Our garden is doing fantastic this year.   We had early rains and they gave it a great start and now we are reaping the rewards.  The Grandkids harvested the potatoes this year for us.  We plant potatoes using the Ruth Strout method by placing our seed potatoes under a thick layer of mulch and they grow.  And when the potatoes are ready to harvest,  we rake the mulch back and  the kids pick up potatoes and drop them in the harvest baskets, easy peasy.   Also we get our grandkids to pick green beans, since it can be monotonous sometimes and extra hands help.  Plus they love being in the garden, especially during strawberry time.

And to make the best use of our fresh green beans and potatoes we used this slow cooker green beans and potatoes recipe.  It’s super easy and has all the flavor that we remember at grandma’s house.   Plus it was a great reward for the children to enjoy and eat what they picked from the garden.    We served these with skillet fried pork chops but this is delicious with just about anything.   

 

Slow Cooker Green Beans and Potatoes Recipe:

Ingredients:

  • 2 pounds fresh green beans, ends trimmed
  • 1 pound  Yukon Gold or Red Potatoes, cut into chunks
  • ¼ pound of bacon (cooked or raw) (We used Members Mark Bacon Real Crumbled Bacon from Sam’s Club.)
  • 1 small onion, finely diced 
  • 2 garlic cloves
  • 32 ounces chicken broth
  • salt to taste
  • black pepper to taste

 

Equipment Needed:

  • Crockpot

How to make fresh green beans and potatoes in a crock pot:

Clean, trim and add green beans to a 7-8 quart crock pot.  And add washed and chunked potatoes along with the bacon, diced onion, garlic.  Pour in the chicken broth, season with salt and pepper and gently stir or toss to combine.   Cover and cook on high for 3-4 hours or on low 6-7 hours.

Remove lid and adjust salt and black pepper to taste.   Serve and enjoy.
