Sweet and Spicy loaded chicken nachos

So if you are looking shredded chicken nachos you have landed in the right place.   These loaded chicken nachos will rock your world.  A corn tortilla chip topped with shredded chicken, cheeses, guacamole, sour cream, and jalapenos makes one ultimate spicy nacho.  Oh Yes!

So for any get-together or celebration that you wish to really wow your guests, try these rotisserie chicken nachos.  They have that combo spicy and sweet flavors that we all love.  You could also serve extra salsa and jalapenos on the side.
  • 16-18oz bag of Tortilla Chips
  • Rotisserie chicken
  • 10 oz bottle BBQ Sauce
  • 2  chipotle chilies in adobo sauce, chopped
  • 1 1/2 cups cheddar cheese, grated
  • 1 1/2 cups pepper jack cheese, grated
  • guacamole
  • 1 cup sour cream
  • 4 green onions, finely sliced
  • 1 cup sliced pickled jalapenos 

Instructions for these ultimate chicken nachos:

  • Preheat oven to 275 degrees
  • In a mixing bowl, combine the shredded chicken and the BBQ sauce (just enough to make it moist) and the chopped chipotle chilies
  • Arrange 48 chips on a baking sheet and top with one tablespoon of the BBQ chicken mixture.
  • In another mixing bowl, combine the two kinds of cheese and mix together. Top each chip with one tablespoon of the cheese mixture and place in the oven for 2-3 minutes until the cheese is melted.
  • Remove from the oven and top each chip with one teaspoon of sour cream and guacamole. Add a slice of jalapeƱo and sprinkle with the green onions then serve

 

These loaded chicken nachos are always a hit at our game day celebrations and is much loved for any cocktail party.    And the presentation is so pretty with all the delicious toppings.  These shredded chicken nachos take a bit more time to assemble but they are so worth it.  But we did use store-bought rotisserie chicken to make things a little easier for this spicy nacho. You could also use store-bought guacamole or our Homemade Guacamole if you wish.

Ingredients

  • homemade Guacamole
  • 1 cup sour cream
