Christmas candy Cookies
 
 
Making Christmas cookies is making memories and is on the top of our to-do list for this busy season.   We love having all the grandkids in the kitchen with flour in the air, and sugar everywhere.   They pull out the mixer and all the cookie sheets.   Then we throw a stack of cookie cooling racks on the counter and start baking.   And this first cookie we start with is these peppermint cookies.
 
And,  how can you beat a chewy sugar cookie with crushed peppermint baked inside?  You just can’t.  So grab your rolling pin, mallet or whatever else you have, to start crushing up some candy canes for these lovely treats.
 

What’s in these Christmas Peppermint Candy Cane Cookies:

Ingredients:

  • 3 Candy Canes, crushed
  • 1/2 cup Butter, softened
  • 1 cup Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1 Egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 cup Flour
  • 1/2 cup Powdered Sugar
Equipment Needed:

 How to make these Candy Cane Cookies:

  • Preheat oven to 350 degrees
  • Prepare baking sheets using non-stick cooking spray or cover with parchment paper or a silicone baking mat.
  • Place candy canes in a zip lock bag and crush using a rolling pin
  • In a large bowl, mix butter and sugar together until light and fluffy, whip in vanilla and egg, scraping the sides of the bowl and mixing well
  • In a separate bowl stir flour, salt, baking powder and baking soda together, pour into the large bowl and mix carefully until well combined with the butter, sugar, egg mixture
  • Fold in the crushed candy cane and mix gently
  • Pour powdered sugar on a large plate. Scoop a heaping teaspoon of dough, form into a ball and roll in the powdered sugar, place on baking sheets
  • Repeat with remaining dough, placing dough balls far enough apart so they have plenty of room without melting into each other
  • Bake 10-12 minutes until bottoms just start to brown, remove from oven and let cool about 3 minutes prior to moving to a cooling rack.

    I'm in the middle of making these right now. I planned on 2 batches for co-workers but had to mix up another. My son (the little devil) stood a t the counter and ate a dozen (at least). Nice festive cookies, Evelyn! Good cookie to use for something non-chocolate. BTW I got about 2 doz per batch.

    I just made a batch of these scrumptious cookies. They are so chewy and delicious. I also added some white chocolate chips to some as they were cooling. Will be adding this recipe to our Christmas treat menu! :))

  4. I made a double batch and made the cookies a lot bigger, say a heaping tablespoon, and baked for 14-15 min, they are beautiful and SO good – thank you for sharing your recipe with all of us!

    1. Oh good question. I’m so sorry but I don’t. I did google it and it says 3 canes is about ¼ cup but that doesn’t sound like enough. Maybe add ¼ cup and then a little more.
