Healthier Roast Chicken


I was not sure if I could roast a chicken without smearing butter under and all over the skin of the chicken:(
Did you know there is about 100 calories in 1 tablespoon of butter!! 

So I used herbs to make this chicken very favorable and stayed away from the butter.





Healthier Roast Chicken

1 nice plumb roasting chicken
1 onion, cut into quarters
2 whole cloves of garlic
springs of fresh rosemary
springs of fresh thyme
olive oil
poultry seasoning
thyme
salt and black pepper

Heat oven to 375 degrees.
Place the onion, garlic and springs of rosemary into the chicken cavity and tie legs together with kitchen string. Also tie the wings to the body with kitchen string.
Rub the chicken lightly with olive oil and sprinkle with poultry seasoning and thyme.
Salt and pepper to taste   
Place in a roasting pan, breast side down and roast for 25 minutes.
Turn chicken breast side up and continue roasting for about 1 1/2 until temperature reaches 175 degrees in the thickest part of the thigh.  

 Remove and place on a carving board.   Let roast 10 minutes prior to carving. 




Roast Chicken is a little higher in calories than just  a roasted or grilled chicken breast. But this is not just a diet I have embarked on but its a change of lifestyle and it allows me to enjoy some of my favorite "normal" food while still eating healthier.

  10. I have never used butter on chicken or turkey and we still get awesome results. I do add some season salt on top-- my family likes that flavor with their chicken. Adding some cut up lemon into the chicken is really good too. Now I am hungry!

I use tarragon, olive oil and lemon juice to rub on the chicken and then the used quarters of lemon I shove inside the bird to keep moist when cooking. the lemon 7 tarragon together is also a delicious flavour and nice and fresh too. but actually, I love any kind of roast chicken!

    Roasted chicken is a family favorite. We stick half an onion, half a lemon, and half an apple in the cavity. Rub with olive oil, sprinkle with kosher salt, pepper, and a little Marjoram, Thyme, and Rosemary. It you like garlic, put a few cloves under the skin. I also turn up the oven to 450 degrees for the first half hour. Then turn down to 350 degrees until down. Enjoy!

  15. I think this post may have an adverse effect on me.... I have never put butter on my chicken and now I want to try the unhealthier version. I never thought of that and need to know what I'm missing.

  18. Looks awesome. I will have to try it. I am a big fan of roasting chicken but hate to go with any butter or oils to baste. This sounds like a menu must. I have been doing the recipe for roast chicken with lemons from Marcella Hazan. It is really tasty, uses no oil, there is no need to baste, and girl...I think you'd love it. It is so juicy. Thanks for sharing. :)
